Today is National Daiquiri Day.
I figured what better way to commemorate this even than by making my personal favorite: Strawberry Daiquiri. Now, this recipe makes either one huge daiquiri (if you have one of those awesome goblets like at the restaurants) or a couple of daiquiris if you are using “regular” glasses. You know, that’s if you want to share…
Also, while I love mixed drinks (and frozen ones at that too), I’m not incredibly fond of the overly sweet ones. So this has a little more tang and not so sweet that you’ll feel like your teeth may fall out. But if you prefer it sweeter, by all means, add some more sugar to taste! 🙂
1 1/2 cup of diced strawberries (this can be rough chop since they will be going into the blender)
2 cups of ice
juice of 1 small lime
1/2 cup of powdered sugar
2 small airline-sized bottles of rum
Add strawberries, lime juice, and ice to blender and blend until smooth. If it is too runny, you can add more ice.
Next, add powdered sugar and 1 of the small bottles of rum and blend once more.
Pour mixture into large goblet. Open 2nd bottle of rum and invert into the daiquiri (btw, this is totally optional. you can just add 2 bottles of rum into the blender if preferred. I like to do this sometimes for a heavier kick while drinking a frozen drink). Garnish with strawberry if desired.
That’s it! Short, sweet & simple! Mostly because my daiquiri is melting… 🙂
