April 8th will forever be Rex Manning Day. I’m hoping one day it will be a nationally recognized holiday…. Ok, maybe not. But it’s definitely a fun day for fans of the cult classic film, Empire Records.
This has been one of my absolute favorite movies for as long as I can remember. Seriously, I wanted to work in a record store (who didn’t) because of this movie. Then I grew up and realized there was no workplace as awesome as Empire Records. *Sigh*
And now I’m contented to spend every April 8th watching this movie and playing the soundtrack. Let’s be honest, I do that a lot throughout the year anyway.
This year I decided to make some cupcakes to celebrate Rex Manning Day. Also, because I had a box of cake mix left from making that Spring Garden Cake. Just to sweeten the pot, I also decided to use some other things I had too much of: Easter chocolate and peanut butter. The result was a beautiful, complex yet simple masterpiece…JUST like this awesome movie!
I prepared the batter according to the box directions then added 1 teaspoon of vanilla extract and set the oven to 375 degrees. Then, I lined a cupcake pan with liners.
Next, I filled each liner about 1/3 full.
After that, I unwrapped a few chocolate Easter eggs and placed them in the center of each partially filled liner.
Once each liner contained a chocolate, I then placed a dollop of peanut butter on top and filled the liners with the rest of the batter. I baked the cupcakes for 20 minutes and allowed the cupcakes to cool before frosting. After they were frosted, I jazzed things up a bit by using some sprinkles because…sprinkles! In hindsight, I probably should have cut the chocolates in half or something because they did not quite melt down as much as I would’ve liked. Despite this, they turned out pretty well and tasted absolutely delightful. It was like eating a moist peanut butter cup.
I was definitely not disappointed!
Now I have the perfect treat to watch Empire Records!
